they took us up to the lounge when we arrived, did the whole shenanigans of looking at the ingredient box of the day with the same speech to all diners, then some snacks and bites which were the best items of the whole meal. proceeded to head down to the main dining area, where most of the hot food were served. with dishes featuring a homemade ‘dashi’ which is just really a chicken bouillon, and chawanmushi which was so painfully salty. nothing following was really memorable either apart from the salt, then we were brought back to the lounge for petite fours and their madeleines. maybe i’m a traditionalist where i prefer cakier styles with a perfect ‘bump’, these felt more spongey, doused in brown butter and cardamom sugar. to each their own but at least they’re warm, but even so couldn’t really salvage the meal.
overall a very very unsatisfying and one of the most disappointing meals of the year. don’t really recommend coming here, as its gone too commercialised, too expensive with unnecessarily strong seasoning.

Once you ring the entrance bell and take the elevator upstairs, your experience will start with snacks in their beautiful lounge, where ingredients of the day will be explained. After that and a tour of the restaurant, the rest of the experience takes place in the dining room, with a nice view to the open kitchen.
While service is impeccable and the place is both gorgeous and cozy, what truly stands out here is the food. It is hard to put everything into words here, so I will just name a few of my favorite courses and let the pictures speak for themselves. The french toast with grilled eel, green mustard and double marinated beef was definitely one of the highlights, as were the scallop crudo and the macaron with foie and grapefruit.
But strangely, the most impressive dish of all was a delicate and simple (yet so complex) onion soup with almonds. It was mind blowing. Onion soup will never be the same for me after this one.

It was the best Wagyu beef I have ever had in Europe, in Michelin and other restaurants.
Wagyu A5 is basically too fatty and smells like fat, and often leaves more fat than flavor in the mouth (especially in Michelin restaurants in Europe). However, the combination of this cooking method and oxtail was excellent.
I felt that they have a delicate enough palate, technique and understanding to use Japanese ingredients. It was a wonderful course menu.
The only dish that was disappointing was the use of mayonnaise, which was cheesy. Why use mayonnaise?
Mayonnaise only tastes like a popular dish.
If you don't want to be reduced to cheesy Asian fusion, please don't use mayonnaise and spices, a combination that anyone can do. This is what I always think.
Mayonnaise erases all the flavors of the ingredients.
The chawanmushi was very well done, but
I felt that the egg custard portion could have been a little more. That way, it could be enjoyed longer.
Enjoying the texture of the egg itself and the taste that has not been invaded by other ingredients is one of the best parts of chawanmushi.
This was a wonderful course menu.
I was even surprised at the delicate palate of the Swedish chefs.

和牛A5は基本的に脂が強すぎて脂臭い、旨味より脂ばかりが口内に残ることが多い(特に欧州のミシュランレストランでは。)が、こちらの調理法とオックステイルとのマリアージュは素晴らしいものだった。
日本の食材を使うのに十分な繊細な味覚やテクニック、理解を持ち合わせていると感じました。素晴らしいコースメニューでした。
マヨネーズを使った料理だけが安っぽくて残念だった。なぜマヨネーズを使う?
マヨネーズは大衆料理の味しかしません。
安っぽいアジアンフュージョンに成り下がりたくなければマヨネーズとスパイス、なんて誰でもできるコンビネーションはやめてほしい。これはいつも思うことです。
マヨネーズは食材の味を全て消してしまう。

This was not a straightforward visit as several months ago, when I was first planning this trip, I thought well what could possibly follow a back to back visit to some of Copenhagen’s finest restaurants? Frantzén of course. So I sent out a few feelers to a few UK chefs that I’m friendly with (who tolerate me😬) to see if they would be interested in a group trip to Frantzén. I think they all responded within 5 minutes to the tune of “hell yeah!”.
Therefore before I knew it I was responsible for 13 seats at Frantzén. This was going to be fun, I thought. That was until the Swedish changed their travel restrictions for entry to effectively exclude anyone from the UK. Suddenly it was me and 12 empty chairs booked in to a three star in Stockholm. Of course it takes a nudge and a wink to land 13 seats at Frantzén so rather than cancel, I did a fresh round of recruiting. Long story short(ish), another fantastic afternoon was spent with 10 other legendary foodies. Some friends and some that I was meeting for the first time. Crisis averted, very-very-first-world-problem solved.

My next stop was to Stockholm, and to my favourite seat in my favourite restaurant on the planet, ⭐️⭐️⭐️ @restaurantfrantzen (equal 1st with @restaurantalchemist Copenhagen. 😘 @rasmusmunkalchemist ) It’s really like coming home when you visit Frantzén, the hospitality is that good. It feels like I’m eating at a friends house. @carl_frosterud was the perfect host as ever. I’ve dined solo here, brought big groups of global diners here, friends and my family and Carl always judges the service and hospitality perfectly. I truly think he’s the best in the business.
And of course the food is sublime. I was sorry to discover while talking to chef Marcus Jernmark that he’ll be heading to Beverly Hills soon to open up his own project. I mean I’m happy for him but I’ll miss his cooking in Stockholm although I am certain that with the incredibly solid team they have at Frantzén that they will only continue to operate at the top of their game.
As I said, along with Alchemist, this is my top recommendation in Europe. Can’t wait to go back in October with some of the UK’s finest chefs. Looking forward to it @cheftonyparkin @jeremychanikoyi @edoardopellicano @rabyhunt @theguseva @bigtime_makin_it_nice @cheflukefrench

Fourth meal in the new place. Transition of menus from winter to spring, we therefore were subject to some of the new dishes.
As always, great food. Perfectly calibrated flavours, executed flawlessly with great easy.
One of the top five places in Europe!
The third visit at Frantzén’s in 2018. I really love that place, an outstanding restaurant concept with outstanding hosts, a really exceptional wine list and delicious dishes. The atmosphere, the people, and of course also the well designed and created dishes make this place to be One of the hotspots around the globe and definitely the hottest spot in Europe at the moment. I already booked two times for 2019, as I enjoy this experience so much.

Bjorn Frantzen received his 3rd Michelin star about a month before I dined there. This was after he closed and relocated his restaurant in 2017 to what he describes as, "The old Frantzen times 10." Every detail of the restaurant is designed to enhance the overall experience. Enter a private elevator that plays music at the push of a button, a beautiful lounge area for champagne and appetizers, and a rooftop terrace where you can smoke Cuban cigars. In the main dining area, guests are seated at a kitchen counter that surrounds the open fire kitchen. The dining area is essentially the kitchen where you get to watch the culinary show unfold. Frantzen can be described as Nordic cuisine with Japanese influences. I've never had a tasting menu in which every course was a home run. Before I knew it, 7 hours had flown by. Björn Frantzen just opened his place again in Stockholm. This time he is really reaching for the stars. A modern, nordic Kaiseki meal with wonderful flavours and combinations, executed flawlessly.
This will be for sure a new 3 star restaurant.
This is Frantzen in its old iteration at the previous cramped premises and it is interesting to look back two years and see how far they have come. I wonder did they think that just two years later they would be open in an incredibly spacious and luxurious new property and by one of only a very few resataurants in the world to be awarded a 3* michelin straight away.
