Lo cierto es que todo está rico en VarraFina, la parte informal del Restaurante Varra. Recetas tradicionales muy trabajadas y redondeadas hasta sublimarlas, sin más historias y servidas sin adornos, que entusiasman a un publico que abarrota la parte baja de manera recurrente. Me ha recordado un poco a lo que hacen en el Tragatá de Benito Gómez. Además un servicio presto y eficiente y una carta de vinos, amplia y con precios sensatos, en manos de Juanma Galán. Taking friends visiting from Paris to this famous establishment for the first time.

Of course we had the steamed flowery crab, plus the smoked goose, and the signature char siu. This time we also had a new dish that was created after Asia's 50 Best in Seoul earlier in the year, with pine nut 'gazpacho'.

My first visit, after hearing about it boasting the best roast suckling pig since the chef moved here from Seventh Son.

The pig did not disappoint. It was, in fact, the best one I have ever had in all my years of having the suckling pig at Fook Lam Moon, Seventh Son, and now this place.

The stewed beef brisket was really, really good, too. Really happy with this simple and classic dish.
