Rasmus and @lykke_alchemist had just flown back that morning from Dubai where @rasmusmunkalchemist picked up his incredibly well deserved number 1 chef in the world award from @thebestchefawards
I remember clearly my first visit to the original Alchemist in 2016 when Rasmus was working pretty much solo behind a small counter of maybe 10 seats (see last pictures) The vision was there even then. An holistic dining experience that would focus on educating people to be more conscious of what they are eating, but without being preachy, and of course with the main focus being on delivering delicious yet thought provoking food. He made a great impression on me back then, and so I went back a year later, then back again to the building site of Alchemist 2.0 where Rasmus cooked us a fantastic lunch in the empty shell of what was to become the world renowned restaurant we know today. This last visit was my 14th I think and it never gets old. It’s always changing, improving and endeavouring to ultimately make the world a better and more sustainable place for everyone to live, including the animals that we share this planet with. I feel extremely privileged to be able to continue bringing new diners to this very special place. See you again in March Ramus, Lykke and team ❤️

Next stop on my best of Copenhagen mini tour last year was to ⭐️⭐️ 🍀 @restaurantalchemist ,and to my mind the best restaurant on the planet at the moment. Having visited around 10 times now it was great to experience it with 6 newbies. As @lykke_alchemist commented, it was like me and Hayley were the calm and relaxed parents watching their 6 very excited kids running around on Christmas morning. 8 hours of incredible food, service and exceptional wines (🤯), experienced from the best seats in the house. @rasmusmunkalchemist is a true genius and as Ferran Adria said to the audience at the Gastronomia conference in Spain, “the future of gastronomy”. High praise from arguably the most influential chef (certainly to our current generation of cooks) in the World. But I couldn’t agree more. Thanks again Rasmus for another exceptional and thought provoking meal.

Alchemist in Copenhagen continues to be an extraordinary dining experience that transcends the traditional boundaries of what a restaurant can offer. Having dined there six times, I can confidently say that this latest visit was the best yet. My words certainly won’t do justice to the experience we had at @restaurantalchemist a few days ago when they hosted a truly once in a lifetime collaboration with Ferran and Albert Adria representing @elbullifoundation_ferranadria and @enigma_albertadria . Original El Bulli dishes, carefully selected from their legacy of 1846 dishes, were served alongside many dishes from Enigma and Alchemist that are a direct result and evolution from Ferran’s work all those years ago. It was really something to see these dishes using techniques that we all now take for granted, and realise just how cutting edge they were at the time and how incredibly influential they have been on chefs today, many without even realising it. The only chef and restaurant that could have pulled off such an event was the new barer of this culinary torch, Alchemist and @rasmusmunkalchemist . With El Bulli being the fire that lit Rasmus’s ambition to become one of the true greats and one of a very rare few to be truly pushing the culinary boundaries, and in ways that will hopefully help the planet in countless ways going forward.

Our research team has been working with a researcher from MIT and the NASA food lab on designing food for space travel. The research included new techniques, one of them was very high aeration, which inspired Rasmus to make an air of soy that would disappear instantly and give space for the caviar to shine.

Another visit a while back to the best restaurant on the planet (IMO), ⭐️⭐️ @restaurantalchemist in Copenhagen. I think this was now my 11th visit and it never gets old. Always innovating, always moving forward while trying to make the world about us a little better, always tasty. It was great to see a bunch of new dishes on the menu and even greater to see that the terrifying pink room (see my last Alchemist post) has been dismantled and replaced by something that doesn’t give me severe anxiety (😬 joking…sort of). And who doesn’t enjoy having their image rendered in artichoke dip! I can’t wait to visit again this year for a very special event indeed. As @lykke_alchemist commented, it was like me and @hayhay_hailz were the calm and relaxed parents watching their 6 very excited kids running around on Christmas morning. 8 hours of incredible food, service and exceptional wines (🤯), experienced from the best seats in the house. @rasmusmunkalchemist is a true genius and as Ferran Adria said to the audience at the Gastronomika conference in Spain the other week, “the future of gastronomy”. High praise from arguably the most influential chef (certainly to our current generation of cooks) in the World. But I couldn’t agree more. Many ingredients used are invasive species (jelly fish, king crabs, etc), which makes the diners feel a little bit better about spending so much on a single meal... The dinner took almost 7 hours which was a bit tiring especially after a long haul flight, but the experience was truly unique and definitely worth trying at least once. •

Second meal at The Alchemist. Slightly changed from the pre-opening dinner at the end of June.
As impressive, thought provoking but even more so super tasty.
Some dishes became, as predicted in June, instant classics, for example the omelette, pure genius. Rasmus will not be able to take this off the menu, ever!
I am looking forward to the GM Guide 2020, I predict a flying start of 2 stars with more to come.
