Truly ground breaking and the ultimate restaurant in terms of pure global influence on the food and beverage scene. I was gutted not to be able to get to Kyoto this year for their popup but hope to visit again before this amazing place is again reinvented late next year

Noma
Right – Noma. Noma is an institution. Its frightful and awe inspiring to say Noma. Noma is the mountain which the rest of the world is in the shadow of. Rene Redzepi is known on the lines of a rock star.
Its accolades many– best restaurant in the world 4 times, and since 2019 its been in the top ten, ten times since 2008 (maybe not there because it moved and was closed in 2017 and 2018) And two Michelin stars since 2008 and the whole world is wondering why it doesn’t have three
Its been on my to do list since I started going to expensive restaurants.
So, it is kind of unfair, everything, and I mean everything Noma could do that day would be scrutinized and honestly the expectations was sky high.
Arriving a bit to early, we were well received by four waiters – which would be a theme that evening, the army of (more or less) helpful hands. We were placed in the garden with a (natural fermented – another theme for the evening) cider. Nice an easy and pleasant to sit and take in the early evening air, and just mentally prepare for the experience.
We were eventually lead though the garden by a new waiter though the garden and to the restaurant doors, receiving a short introduction to the place.
We had the mandatory at the door pictures.
Opening the doors in the restaurant we were shocked to be received by even more waiters. Overwhelmingly many waiters. To many waiters – I might as well get this of my chest, the evening was a sensational experience for the senses, and confusingly well meaning service. At the other two stars I have been at, the service was way better, fewer but more personal waiters. It lead to confusion at the end of the meal where one waiter said there would me more desserts then there were. That’s just no good – the best restaurant in the world should have the best service as well. That was not worth three Michelin stars, barely two. Now that’s out of the way. That have buggered me.
The placing of Noma is very cleaver, a peace of nature in the middle of Copenhagen. We were seated with a view to the garden and lakes. It was beautiful, so was the restaurant. Very relaxing and just breathtakingly beautiful. The whole atmosphere and feel of the place is.. not a finger can be put on that.
We opted for the winemenu – because why the hell not? The theme was natural fermented wines, and bordering funky at the end, daring but perfect. We have experienced quite a few Italian natural wines other places, and even at Noma they are present, and it works. Nothing to say about that – maybe that there was plenty, we ended up with quite a few glasses of wine at the end, and the mood was lifted maybe a few feet to high, but on the other hand I could just have said no, so that is not on Noma.
The Food – that was quite a journey, a well tasting fresh joyney. Starting with the flowpot with beetroot soup was good. A bit smokey and had that fermentation umami – and it worked.
Fresh Cauliflower with waffle and a kind of miso was fresh and good. The miso/umami/mushroom extract was a theme for the evening, and that part of the journey was very tastefull. Red peber with fat tasted of meat.

Rene was very generous with his time and spent quite a while chatting with the 4 of us about what the future might hold for not only Noma but the now closed restaurant 108 (maybe the new Noma burger spot is one idea doing the rounds) and the future of the industry as a whole. When I asked if they had found a ‘new’ clientele base in the local residents of Copenhagen to replace all the international diners that have stopped travelling, Rene made an interesting point that yes they had, but whereas there used to be a seemingly endless supply of monied foodies able to jump on a plane and splash the amount of cash it costs to eat at Noma, the locals who can now get a formerly very hard to book seat will usually only visit once as a special occasion. And there are of course only so many locals visiting once before you “burn through them”. So ultimately it’s non-sustainable as a long term plan.
Noma has been of huge influence throughout the culinary world. Always pushing forward and not afraid to try new ideas and experiment in ways that deliver menus that to me are not boring and predictable but often challenging and thought provoking as a diner.
I am sure they will come back stronger than ever as is my wish for anyone in this brutally struggling industry.
Go out and eat if you can. It’s doable in a safe and responsible way. I don’t believe it’s just luck that after visiting over 45 restaurants last month I received a negative COVID test result, but the result of an industry that has put in place systems and precautions that together with your own personal precautions have created a safe environment in which to travel and eat in.

One point I wanted to make now that I have been 7 times in 2 years at Noma.
My contribution to the long and emotional discussion about why Noma does not have 3 stars was always that there is a price to be paid for pushing yourself to the extent the Noma teams does. It creates sometimes dishes which do not connect. This is not a negative sentiment but a neutral observation. But the collateral damage is consistency.
This year this has changed. Especially in act 2 and 3 of this year.
So the only possible conclusion of this is, it is high time to elevate one of the most important restaurants on the last decade to three stars. Less

Noma continues to evolve and tries to push the boundaries.
The efforts it takes to throw out everything done before three times a year and then on top of that to confine yourself to one theme like vegetables is super human.

Mind-blowing.
Noma created the Nordic movement and it still leads it. What an accomplishment. And while doing all of this, one can enjoy a really interesting and very tasty menu.

The level of creativity and ambience during Vegetable Season is unique here and after a slowish start the level and flavors became mindblowing. As a little minus the wine parring was more average than during Sea Season

It is incredible hard to keep a dinners attention throughout a multi-course menu when you can play with seafood, fish and meats. When all you have is vegetables, this task becomes exponentially harder. I have visited every single Guide Michelin rated vegetarian restaurant on earth but there is only one (Fu He Hui in Shanghai) which managed to keep my interest. Until now.
The vegetarian menu at Noma in 2018 is phenomenally creative, pleases with extraordinary combination of flavours and textures, all of this presented very, very beautifully.
Three dishes were for me just off the charts and clearly next level.
berries and fava beans - a harmony of sweet and sour, soft and crunchy textures and the exact amount of acidity that the flavours lingers in your mouth like a Chateau Mouton 1982.
caramelized milk and cheese - this unassuming title hides the layer of summer truffle which covers the entirety of the base layer. This creates an unbelievable sensation when you eat it.
shawarma of celeriac and truffle - thin layers of celeriac alternated with truffle create a meaty texture releasing lots of umami. You wish you could ask for seconds.
All in one wonders how one can come up with so much creativity and take so much risk. As the current food thought leader Réne and his team succeeded beyond everyones wildest hope and delivered a phenomenal second stage of the their Tour 2018.

Noma 2.0, in a new location, where the staff kitchen is now bigger than the entire kitchen in the old place, tries to reinvent itself.
Often these innovations completely flop as there is too much pressure and strain and too little easy creativity.
Not so here! I have been a fan of Noma but had somewhat mixed meals there, very good ones but also meals with dishes not really connecting with me.
However this seafood themed tasting menu played with various levels of acidity paired with different textures and flavours. I was afraid that I get a bored as there is limited possibility of taste progression if you stick to just seafood, but the Noma Team managed to keep me and my palate alert and interested. The "main course" a BBQed head of cod was of great taste and very playful. There was only one dish which caused some conversation on our table, the horse mussel ragout. The tomato based sauce was so strong in flavour that the clam was reduced to texture. This might have been by design but nevertheless caused some discussion.
We were scheduled for the first ever serving of Noma 2.0 on Thursday for lunch, but a mishap with one of the equipment forced the Noma team to move Thursday's meals to Saturday and Sunday evening. Despite this, the execution of all dishes very flawless and throughout the menu consistent.
The ambience and atmosphere they create is genial, starting with the staff greetings to the lounge where you have your dessert and coffee. The main dining room is, as one expects, dominated by light wood. The tables are well spaced and the seats very comfortable so you like to sit through the menu.
In the past there was often a discussion of why the Guide Michelin did not award Noma a third star. Based on the publicised criteria I completely concurred, it was for me and most likely for them the lack of consistency.
It is early days now, but if the vegetable and game season turns out to be as good as the seafood season, I predict that they are a shoo-in for the third star in 2019 and also for a return to the top of the WB50 List.

I rarely felt that much excitement and energy in a restaurant from the staff and all the lucky guests. The new restaurant is much bigger than the previous one with different sections for the kitchen, lab, vegetables and herbs, oven, etc...

Everything is designed to turn your meal into an a special experience and not only a simple lunch or dinner. My favorite dish of the day was the head of the cod barbecued. To this day my wife Amy insists that this was the best meal of her life.
And she is right, it was just perfect. Experimental but not not one course flawed. A wonderful combination of flavours and tastes.
