some hits & missed in terms of flavour as anticipated, but overall prefer this season over game and forest season. still one of the coolest experimental kitchens with out of the box thinking despite them getting lazier and more commercial. bookings aren’t impossible too, as long as you enter the site on time with a timeslot or two in mind + a registered tock account logged in and ready to go.

At least once per year since my first visit in 2013 (twice in the same week for their Mexico pop up). 6th meal at NOMA 2.0
2nd Season; vegetables

Noma continues to evolve and tries to push the boundaries.

The efforts it takes to throw out everything done before three times a year and then on top of that to confine yourself to one theme like vegetables is super human.

Despite that, this vegetable menu is lighter, more refined and flavourful than last years. It was my favourite season last year and there is a good chance that it will be it again.

On Monday Michelin will announce it’s guide for the Nordic countries. This will be the first time that the new Noma will be eligible for any Michelin awards. What are your predictions? Third act of year 1 of Noma 2.0 and grand finale. The game and mushroom season. As always, a sheer boundless creativity and drive produce shocking, comforting, tasty, great and exceptional courses.
Juxtaposed between a reindeer and duck feast one can find dishes like pheasant broth and acorn salad. The feast itself celebrate the respective animal in displaying unusual parts like heart, sweetbread and brain.

The level of creativity and ambience during Vegetable Season is unique here and after a slowish start the level and flavors became mindblowing. As a little minus the wine parring was more average than during Sea Season

Scene 2 of the relaunch of Noma, the vegetable season. In one word: IMPRESSIVE!

It is incredible hard to keep a dinners attention throughout a multi-course menu when you can play with seafood, fish and meats. When all you have is vegetables, this task becomes exponentially harder. I have visited every single Guide Michelin rated vegetarian restaurant on earth but there is only one (Fu He Hui in Shanghai) which managed to keep my interest. Until now.

Noma 2.0, in a new location, where the staff kitchen is now bigger than the entire kitchen in the old place, tries to reinvent itself.
Often these innovations completely flop as there is too much pressure and strain and too little easy creativity.

1 year after René Redzepi closed Noma at Strandgade 108, we were glad to be in the new Noma 2.0 for the second day of the reopening. I rarely felt that much excitement and energy in a restaurant from the staff and all the lucky guests. The new restaurant is much bigger than the previous one with different sections for the kitchen, lab, vegetables and herbs, oven, etc...

To this day my wife Amy insists that this was the best meal of her life.
And she is right, it was just perfect. Experimental but not not one course flawed. A wonderful combination of flavours and tastes.
Nordic cuisine at its best.
