Third act of year 1 of Noma 2.0 and grand finale. The game and mushroom season. As always, a sheer boundless creativity and drive produce shocking, comforting, tasty, great and exceptional courses.
Juxtaposed between a reindeer and duck feast one can find dishes like pheasant broth and acorn salad. The feast itself celebrate the respective animal in displaying unusual parts like heart, sweetbread and brain.
This menu is the culmination of the year of hard work for the team. For me it might top the vegetable season (I went there twice) but this is an academic distinction.
Now after four meals in the same year at Noma 2.0 I am still in awe of the the task they set themselves. Just think about it. How many people poured their intellect and creativity into this menu, just to have thrown out at the end of the 6 something weeks? Just to start again and try their hand on seafood for early 2019. Mind-blowing.
Noma created the Nordic movement and it still leads it. What an accomplishment. And while doing all of this, one can enjoy a really interesting and very tasty menu.
