Sobremesa do ano: em forno de lenha, queijo Tomino suavemente marcado; beringela roxa grelhada com salsa verde; la pièce de résistance, cebola acquaviva, basílico, manteiga da montanha, xarope de ácer. Caramelização e textura rija, branca por dentro, só com os açúcares polímerizados pela cozedura ao vapor.

A fantastic lunch last year at @tohqa_ near Cadiz. This is a beautiful spot to enjoy a long lunch in the open courtyard. Chef @edu__perez_ presents a tasting menu of dishes cooked mainly over charcoal from his small kitchen overlooking the courtyard. While also keeping one eye on the vinyl playing out all afternoon. I can’t wait to go back.
