Nestled in a serene villa by the Manzanares River, OSA offers an intimate dining experience for up to 26 guests. The restaurant's minimalist decor, utilizing natural materials like wood and travertine, complements its philosophy of merging traditional and modern culinary techniques.
Jorge Muñoz and Sara Peral, both seasoned chefs with backgrounds in renowned kitchens such as Mugaritz, DiverXO, and Coque, collaborate to create what they describe as "goldsmithing" in their culinary practice. This approach involves meticulously refining each dish to highlight its essence. OSA’s menu is highly dynamic, changing frequently based on seasonal availability, and features innovative dishes such as Rilletes-Conejo-Le Mans, Trucha-Bedón-Manzano, and Salmonete Amasake. Their cuisine combines local and international influences, with a strong emphasis on technique and ingredient respect.
The restaurant has quickly garnered acclaim, earning a Michelin star for its exceptional quality and dining experience. Customer reviews often commend OSA for its innovative dishes, intimate setting, and the chefs' meticulous craftsmanship. The holistic dining experience begins with a picturesque walk along the river, enhancing the ambiance.
OSA’s commitment to a singular, evolving menu structured around trilogies of products, and its inventive use of smoking and aging techniques, sets it apart. Notable dishes include the smoked trout and the meticulously prepared grouper using the sukibiki method. These features, along with the chefs’ dedication to their craft, make OSA a standout in Madrid’s vibrant culinary scene. The combination of innovative culinary art and an immersive dining environment positions OSA as a top dining destination in the city. Less

The second day of my best of Spain tour took us to ⭐️ @osa.restaurante in Madrid. I first tried chef Jorge Muñoz’s cooking at the excellent Picones de Maria. Two visits there and I was hooked. So putting his and @sara.chefa ‘s new restaurant on the tour was a no-brainer and it absolutely didn’t disappoint. In fact, we were made to feel so at home that we ended up staying for over 6 hours.
What an incredible week. The Achefabroad best of Spain tour was a huge success and I honestly think that the lineup was unbeatable. 8 days, 12 amazing restaurants and 11 even more amazing gastronauts. Time to catch up properly with the posts so you can see exactly why you should be heading to all these world class restaurants. Please click the link in my bio to see what other fantastic tours we have coming up (Scandinavia, Thailand & Spain) DM me for more info.
We will be heading back there next year around this time for my best of Spain tour 2025 so please reach out if you’d like to grab one of the seats before they all go!
