Também aqui, o maestro comanda e inicia com os primeiros pratos a entoarem com a profundidade ressonante da percussão e dos contrabaixos, até à marcante entrada dos violinos, que protagonismo sempre procuram. Cada prato deste longo menu desempenha o seu papel com afinco, criando uma sinfonia de sabores que se entrelaçam em perfeita sintonia.

Foi a segunda visita ao restaurante (outros posts por aqui andam no feed) e, desta feita, foi a vez de experimentar o menu inovador, mais vanguardista, ainda que com a revisita - a pedido - a clássicos que não poderiam faltar. Foram 4h de uma experiência gastronómica que mais não foi do que uma viagem, em jeito de sonho musical, onde nos esquecemos de tudo à nossa volta e nos deixamos levar pelo que à mesa nos proporcionam.

Por cá, ficamos a conhecer o que de melhor na alta cozinha contemporânea se faz, sempre com uma forte base cultural, catalã, com foco nas memórias dos três responsáveis que nos proporcionam tal experiência - Oriol Castro, Eduardo Xatruch e Mateus Casañas.

Acho que nunca me foi tão fácil resumir um almoço. Uma refeição de 4h, um longo e prazeroso espetáculo gastro-performativo em que as texturas, sabores, temperaturas fazem parte da linguagem utilizada. Técnica, criatividade, inovação e irreverência. Disrupção (bastaria ver a apresentação no Madrid Fusion). Percebe-se a linha condutora, ainda que com cunho próprio, que deriva dos anos que os chefs @oriolcastroforns e @eduardxatruch passaram no el Bulli, onde aí foram elementos chave para o sucesso do mesmo.

Há muito que não tinha uma "das melhores experiências gastronómicas de sempre". E esta subiu directamente ao TOP3. São poucos os restaurantes que me fazem logo de imediato querer voltar, mas o facto de existirem dois distintos menus - e ter provado apenas um deles (ainda que com extras off menu) - fará com que muito brevemente volte para mais deleite.

As always there were a bunch of new dishes from the ever forward moving team here alongside some of our favourite classics. With the newly developed ‘de-alchoholised’ drinks pairing that I mentioned in my last post (FB link in bio), the team at Disfrutar continue to astound with their advancements. If, like me, you never had the chance to eat at El Bulli, this is probably the closest you’ll come. My number one priority when planning a trip to Barcelona is to book a table here. When I came in 2018 after a long time without revisiting the restaurant, Tony the gentleman who served me said I could choose from 25 courses or 30 courses. I said please tell Chef to decide for me 😊. Then he went to the kitchen and came back and said, Chef @eduardxatruch said actually there was a menu of 38 and if I would like to try. 😆😆😆 38 is a lucky number in Chinese, so bring it on!

The menu was in pic 3, plus an additional Multispherical tatin of corn and foie gras, so 39 in total (plus drink 🍸 pairing). (By the way 39 is still a lucky number in Chinese 😜). It was one of the best meals I had in my life. So stunning, so many surprises. It was the meal I said to myself, Disfrutar is one of the best restaurants in the world.

I was lucky enough to visit ⭐️⭐️ @disfrutarbcn in Barcelona a couple more times before Christmas within the space of just a couple of weeks (full review with all pics & wine is up on my Facebook now, link in bio ☝🏻) So this post covers both meals. It really blows my mind the level of creativity at this restaurant. I mean, the chefs are ex-El Bulli so maybe I shouldn’t be that surprised. But bare in mind that they run two menus, one consisting of their more classic signature dishes (between 30 and 40 by the way) and the other more forward thinking menu of dishes that are developing as the seasons pass and as the ideas are perfected by the team to a point where they are put on the menu (also 30 to 40 servings). So on any given day when you walk into the restaurant, they will have in the region of 80 different dishes coming out of that kitchen. And that doesn’t include all the tweaking that they must have to do in order to pander to the multitude of dietary requirements that are now so common place.
Pretty amazing right? Then consider this, I have been quite a few times now because I love the place, and sometimes, like this post, I have been and returned within a week or two. They keep track of this and so the result is that they produce a menu that has maybe 50% different dishes than the last time you came. That’s around 15-20 new dishes or dishes from the repertoire that they will call upon because they don’t want you to become bored of the menu. This is the true test of ambition and drive in a restaurant. As my friend @jeffrey_merrihue said, the El Bulli flame shines brightly at Disfrutar

Just a few of the 30(!) brilliant courses last night at @disfrutarbcn last night. Truly, one of the greats. So impressed by everything from the minute I walked in the door. Service was impeccable. They have transcended modernism into pure creativity. After the meal, we had an extensive tour of their studio and test kitchen where amazingly detailed planning and experimentation happens. So good, I’m going back in for lunch again tomorrow, to try an entirely different menu.
And I almost forgot the amazing beverage pairing that went with the 29 courses @disfrutarbcn
