My only previous encounter with @restaurantsubstans was a dinner 12-13 years ago, when I was a student. Back then, during the weekdays, you could get four dishes and four wines for DKK in addition to the bigger menu - a real bargain that attracted many young people including myself.
Now, 13 years later, I returned to Substans at their new, impressive location on the 11th floor in a new building in Aarhus Ø.
A very, very good lunch by @rene_substans and @louisemammen that I can highly recommend you to try. Let’s begin with the appetisers:
1. Squid, carrot crudite and a sauce made of carrot and ginger with coriander oil
2. Black tart shell with ponzu, egg yolk and radish
3. Oyster, fennel and sake
4. Dried celeriac rehydrated in apple juice and glazed in brown butter and mussel cream

The ambience is always lively and the staff is relaxed yet attentive and knowledgeable about everything being served. Just go!
1. Butter-fried celeriac served with cheese sauce, parsley oil and shiso
2. Venison, onion purée, zucchini and an intense sauce with venison shank
3. Cappelletti with lobster and tomato
4. ‘Himmelbjerget’ cheese in various textures and plums preserved in rum
5. Lemon verbena ice cream, grapes, nectarines, rum and caramel

Inspired by his father who use his barbeque in all sorts of weather, @yveslelay came up with this nothing short of spectacular serving of grilled quail breast served with shallots, sautéed corn, polenta, herb butter and - finally - the most amazing sausage made of quail, chicken and foie gras. Together with the perfectly sticky sauce made of the bones of the quail, each and every component came together beautifully, making this one of the best main courses I've had this year. Worth a visit @aterre alone.
