Waffles are very popular among the Danes. They tend to be quite soft and moist all way through, probably because the waffle iron isn't hot enough. @nomacph has taken this tradition the next level with these super crispy waffles made with great amounts of double cream, which gives them a very buttery taste. They were served with cloudberries and whipped cream. Very good!

One of my absolute favourites from the @nomacph game and forest season was this dish consisting of chestnut purée, freshly pressed hazelnut oil, whipped cream, thinly sliced fresh hazelnuts and caviar. The texture play as well as all the nutty flavours in this dish made if outstanding.

PS. The picture shows a duck head with the beak being separated from the skull. The beak contained a smoked duck heart tartar whereas the skull contained a duck brain nugget.
It was so good, and NO, this is not animal cruelty. By using the entire animal, you show it respect. Period.
