I came into @koancph with high expectation in Oct 2021 and they did not just match, they blew my mind. The members of the core team did not change much but the cuisine reached new maturity.
The precision and balance of flavors is a proof of their continual refinement to perfect the dishes. The harmony and sensibility of the dishes demonstrated the understanding of Korean / Asian flavors, elements and philosophy by Kristian and his team.
After almost 2 months from my trip, after visiting 115 restaurants, I asked myself, which are the meals that I still remember fondly and savor the most. Which meal brought me to a journey of the chef’s history without the need to explain it? Which meal told me about the stories of the kitchen with the food as the narratives? Which meal had deeper thought and context beyond the dishes we ate? Which meal that expressed the passion, the care and thoughtfulness of the team?
This meal, at Koan, is one of them.
I wholeheartedly love this restaurant and Kristian’s creations, and will not have a second thought to recommend it to all my friends ❤️

Knowing when to use caviar is parallel to knowing when adding salt is already enough. There are many desserts these days that have caviar but many show how caviars are misused instead of being a genius touch (eg caviar in pure vanilla ice cream 🙅♀️). When you eat this donut you will understand why salt would not be enough and caviar is the icing on the cake
