(SWIPE FOR MORE PICS) When @kristianbaumann told me that @lars_williams started this company and visited it, I thought this coming from Lars cannot be more fitted. I always had this impression of Lars as a chef with also a mad scientist 😝🙇♀️. He had such strong technical skills but also such an adventurous mindset and creativity in creating some new innovative approaches (of course it is also through the collaboration with the whole team at Noma as well).

I just think that what he did and @empiricalcph is such a great example that sometimes being a good chef is not needed to be defined by cooking food in a restaurant. There are also many ways to turn your knowledge and skills you learn from your experience into something impactful. In the distillery you will also see a lot of the ingredients or souvenirs they collected around the world. (Please scroll through the pics). This is the proof of their learning and inspiration. And when you have enormous passion, creativity, and knowledge and skill, they can do amazing things without a kitchen.
