Peas, roasted chicken fat and oscietra caviar served at (soon to be again, if you ask me) ⭐⭐⭐ @maaemo - another dish showcasing a reference product, in this case the tiniest, sweetest peas that topped in my mouth and thereby released all their goodness. Roasted chicken fat is hard to complain about, the same counts for caviar. That said, I found that the chosen caviar was a little too mild in its flavours. I would have chosen a more intense caviar in order for it to play a bigger rolo in the dish. That said, this was still a splendid dish with the peas being the absolute star of the show

This mini loaf of bread is certainly one of the best bread servings I've ever had and without any doubt the best brioche I've come across. It was brushed and glazed with lamb fat and fermented honey and topped with lavender flowers. It made my brain explode and I had to ask for another piece 😍😍😍 It was soft, buttery, sticky and incredibly delicious. @maaemo is a very special restaurant.
