To many, this is for sure one of the more provoking dishes @restaurantalchemist - minced chicken with chanterelles presented on a chicken foot. The entire point with this dish is that the meat is coming from happy free-range chickens and thus this is the first time these chicken feet are in a cage. .

Snowball made of tomato juice. You eat it with ski gloves on and the texture is like new fallen snow. The golden condiment is one of the wonderful olive oils from @olio_terraliva, which got very thick and creamy by lying on the frozen plate. Another brilliant dish @restaurantalchemist

One of the things that really impressed me during my visit @restaurantalchemist is how sharp and precise all the dishes look. This "smoke" ball is a good example - just look at it! The crispy and completely hollow bread was topped with a cream made of Jerusalem artichoke as well as caviar and filled with smoke. Caviar served on top of a slice of "toast" made of vegetable cellulose fried in brown butter @restaurantalchemist. The sweetness, crunchy and slightly chewy texture of the toast worked perfectly with the caviar enhancing its taste and textural finesse .

Croissant and ham a la @rasmusmunkalchemist @restaurantalchemist which is not the usual one. This airy, super fragile croissant is made of potato starch and topped with exceptional charcuteri made of old Galician dairy cow. So good!
