Super fresh and juicy langoustine @restaurantbrace sprinkled with juniper and served with an emulsion made of South Italian bell peppers. The emulsion added a hint of spice which worked very well with the sweet crustacean .

About half a year ago I visited @restaurantbrace and it was a pleasure to realize that they are definitely moving in the right direction; even more delicious dishes than last time, for instance these slices of salted scallop served with basil oil, toasted sesame and burrata snow. It would have been too heavy with normal burrata or cream and the snow was a brilliant way to add freshness without using acidity #invited
