In an industrial and for Hamburg very untraditional location for a restaurant, you'll find @100200.kitchen, which received its first Michelin star last year. Compared to many other German fine dining restaurants this is much more reduced and based on '' less is more'', which I really like.
This dish is a perfect example. Entire pikes are presented in different variations, in this case like a mousse, whereas as the bones are used for the sauce together with vin jaune. A little bit of caviar on top. Bravo .
