Inspired by his father who use his barbeque in all sorts of weather, @yveslelay came up with this nothing short of spectacular serving of grilled quail breast served with shallots, sautéed corn, polenta, herb butter and - finally - the most amazing sausage made of quail, chicken and foie gras. This one is served @aterre.dk and consists of a compote of peach covered by a thin shell of white chocolate imitating a real peach.
