Shrimp croquettes seem to be a mandatory appetizer at almost any restaurant in Brussels. @bozarrestaurant_karentorosyan is no exception. Here, they serve the deliciously runny croquette with an concentrated and foamy bisque as one of the appetizers. Very good!

The millefeuille @bozarrestaurant_karentorosyan deserves another spot in the limelight. Look at the perfectly flaky layers of puff pastry separated by custard packed with vanilla. If you really want to know what a millefeuille is about, I strongly recommend a visit at Bozar in Brussels

As I mentioned in my post yesterday, @bozarrestaurant_karentorosyan is a true master when it comes to dishes covered in some kind of pastry. This dish, the granivore, is another one of his signature dishes. I had high expectations but they were exceeded. A breast of pigeon, goose foie gras and smoked eel are layered together and wrapped in a thin layer of cabbage before getting its final layer, a thin type of pastry sprinkled with seeds.

The magnificent piece of craftsmanship is cut in two tableside and served with an intense, peppery sauce made of pigeon bones. Everything melts together into a perfect symbiosis in deliciousness.

Pure excellence and a dish, you cannot miss when visiting Bozar

I'm back in Copenhagen after a splendid trip to Brussels. The trip was full of excellent experiences but the best one - for me - was without any doubt the visit at one Michelin-starred @bozarrestaurant_karentorosyan

Mr. Karen Torosyan has dedicated his work life to perfect old French classics like the pithivier and - as shown in this picture - the pâté en croute. Actually, he won the pâté en croute world championships back in 2015 and I do not have a hard time understanding why.

This was pure perfection in any sense, from the perfecly buttery and fragile crust to the umami-rich jellyfied jus and the interior consisting of pork varying in size and texture. I was really moved by this piece of edible art and I cannot recommend this place enough when visiting Brussels. It might be a one-starred restaurant but his signatures (I'll post some more within the next days) are pure three-star dishes
