The most most surprising and actually the best of all is ... their Baguette! We were eating the pastries and bread we had when @richardhartbaker came over with a baguette and he said “you must try this now. It only lasts for 15 mins” He was like, either 15 mins or nothing (very Japanese shokunin) and so we stopped everything and ate the baguette 🥖 . It was soooo good 😱😱😱. I hope you can manage to see a final piece of pastry from @hartbageri - this time a Danish classic called spandauer made of puff pastry with vanilla custard. This one was very flaky and buttery, and the custard was full of vanilla flavour. Very good!

When Richard Hart (former head baker at Tartine Bakery in SF) and Rene Redzepi (of Noma) get together to create something, the result is Hart Bageri. Opened in September 2018, it has become one of the hottest bakeries in town. Before leaving for the airport, we had to make a pitstop here. And it was just in time to try their newest menu item – their delicious take on a Spanish Basque-style cheesecake with a caramelized crust and a smooth and creamy center. ?

Almond croissants a la @hartbageri by @richardhartbaker shaped like tiny bowls with a kind of hybrid between remonce and custard in the middle. Topped with caramelized almond flakes. Not too sweet and crunchy. Nice! .
