Tommy Friis might not be the most mentioned in the media but oh my, he can cook. This crispy malt pillow appeared to be an incredible present of crab, cod roe, cucumber and kohlrabi. It was topped with a mussel sauce with Swedish löjrom and trout roe as well as salted egg yolk. Marvelous! I better pay them a visit soon! Served at the recent collaboration dinner @restaurantniels .
