I believe this setting by @mielcke and @thomas_korby deserves another post. Not only is this dish one of the best I've ever had. It was also accompanied by an iconic wine made by one of the pioneers within the biodynamic movement, Nicolas Joly. One of the most iconic dishes by @mielcke - seasonal mushrooms cooked in a Chinese masterstock served with caviar and an elderflower beurre blanc. Who comes up with the idea of combining Jerusalem artichokes, pistachios, anchovies and bergamot?! Only the incredible @mielcke can answer that question. I can only conclude that the result was absolutely amazing with these pungent flavors elevating and neutralizing each other at the same time. Bravo! .
