While some dishes @restaurantalchemist - like the butterfly from one of my previous posts - seem to primarily be about delivering a certain message, others offer pure indulgence, e.g. this serving of king crab. Obviously everything at Alchemist serves a higher purpose and this dish is used to tell about the crab tail which way too often gets discarded. It is filled with langoustine and served with tomato hollandaise hiding a homemade xo sauce. Oh my, it’s good!
