There's a new vegan fine dining restaurant in Copenhagen. Well, technically it opened last year but due to the ever lasting lockdown, @restaurant_ark has only been running for a few months. This is unarguably a game changing restaurant with a no compromise approach to veganism - everything from the food to the painting on the wall is 100 percent vegan. I had the pleasure of tasting a few dishes a couple of weeks and I predict that this restaurant will be the first vegan restaurant in Denmark to receive a @michelinguide star
This dish is based on blue oyster mushrooms from Ark's own mushroom farm, @fungafarm glazed in an umami rich reduction served with umami-intense mayonnaise. A stunning dish! Less
