Ramen topped with grated Japanese yam and a raw egg. This is ネバネバ food. Neba-neba means slimy, and they love it in Japan. I’m not a fan of about half the neba-neba stuff out there (natto, okra, nameko), but Japanese yam blends perfectly with soup. A great match.

Joroku’s super-central location (minutes from Namba Station, in a very lively part of town) means convenience. 麺屋 丈六 (Joroku in Osaka)
Joroku’s super-central location (minutes from Namba Station, in a very lively part of town) means convenience. Not a particular criteria for a good bowl, but it’s great to have a lot of before and after options. And while Joroku is on a rather shady street, more family-friendly fun isn’t far away. The standard bowl is 高井田系 – takaida-style. It’s an Osaka thing, and it is wonderful. Deep, dark tamari shoyu is used. Shoyu 101 teaches us that tamari doesn’t have the wheat added, resulting in a much heavier taste. If you’ve ever been served a special shoyu with sashimi, it was probably tamari.

Asaya (参宮橋 あさや) is a newish unagi shop in Tokyo. Live eels from different parts of Japan are cooked with seasonal ingredients. This was the first time I had ever tried eel sashimi. Asaya (参宮橋 あさや) is a newish unagi shop in Tokyo. Live eels from different parts of Japan are cooked with seasonal ingredients. This was the first time I had ever tried eel sashimi. Apparently the blood is a bit poisonous and needs to be drained throughly before slicing. Summer is eel season in Japan, and the noodle-looking guys are supposed to help curb the heat.
Random thing about Japan. It is considered unhealthy to eat eel and pickled plum together. Sour and oily are too taxing on the tummy! I’ve literally had junk-style ramen with pickled plums so I don’t know about this theory.

Menya Hakkaisan is a highly-ranked shop in the northeast corner of Osaka, practically on the border of Kyoto. The shop’s ramen features homemade noodles with a blend of whole grain, domestic ingredients, and a no added MSG broth. This shop is on my short list of must-hit shops in Osaka.

中華そば うえまち (Uemachi in Osaka)
A half-hour before opening, there were five people in line. The lure of homemade noodles and a light, preservative-free broth perhaps. I went with the 中華そば, chukasoba, the standard bowl. The other option that looked appealing was the 和え麺, aemen, an all-dashi soup that must be more like a buckwheat soba broth. This bowl, though still on the current Best 100 Hyakumeiten, was on the old school all-Japan Top 50 from back in the day.

I’ve been seeing these signs a lot recently. I made it a mission in 2022 to complete the list of Japan’s Top 100 ramen shops (actually 300) called the Hyakumeiten (百名店). Yes, I finished, thanks to spending around 40 days in Osaka over the course of a year. Kasumi is no rookie to this list, having been given “Best Ramen” awards since well before this list existed. Their niboshi mazesoba, sans soup, is an easy bowl to crush.
