Ultra-refined shoyu ramen is fairly common in recent years. You can find shops like this from Hokkaido to Kyushu, and big cities like Osaka obviously have their share. Mugen is the cream of the crop. The master, Mr. Okada (岡田店主) has been in the restaurant game for a long time. He ran yakiniku restaurants for over 10 years. He eventually left the restaurant industry to work as a repo man for a car rental service until his friend called from Australia. His friend wanted to expand his bento lunchbox restaurant into a ramen shop. Okada-san, with little experience in the matter, took a crash course with the Yamato Noodle School, and brought that knowledge down under. When he returned to Japan, he tried his hand at running his own ramen shop.

If you nerd out about deep umami flavors, this bowl is up there. The master uses konbu from Raosu and Rishiri islands in Hokkaido, considered the best in Japan. If you are ever lucky enough to visit that part of the country, you’ll see small-scale mom-and-pop kelp operations, where pristine pieces are hand dried by hand and delicately wrapped up to be shipped to the finest restaurants. With that as the base, he flavors this bowl with a special tare reasoning made from ayu fish sauce and natural, unprocessed shoyu.

Joroku’s super-central location (minutes from Namba Station, in a very lively part of town) means convenience. Not a particular criteria for a good bowl, but it’s great to have a lot of before and after options. And while Joroku is on a rather shady street, more family-friendly fun isn’t far away. The standard bowl is 高井田系 – takaida-style. It’s an Osaka thing, and it is wonderful. Deep, dark tamari shoyu is used. Shoyu 101 teaches us that tamari doesn’t have the wheat added, resulting in a much heavier taste. If you’ve ever been served a special shoyu with sashimi, it was probably tamari.

Random thing about Japan. It is considered unhealthy to eat eel and pickled plum together. Sour and oily are too taxing on the tummy! I’ve literally had junk-style ramen with pickled plums so I don’t know about this theory.
