An exuberance of magnificently aromatic Alba truffles at @toshikiwatanabe’s In Bosco. Not pictured, the enormous truffle he chopped up and made “truffle chip” ice cream with. Just unreal.

An outstanding meal in deep Wakayama at @villa_aida_wakayama. One table per night. Vegetables from their farm next door. A deep Italian wine cellar (and some Japanese gems too). Delightful hospitality. Absolutely worth the journey.

A few highlights from a restaurant I’ve spent years trying to get in to. Matsukawa was elegant, restrained, simple, and with impeccable service. Ceramics were gorgeous and often quite notable and/or old. Flavors were subtle and refined. I’d definitely like to go back again, if I can get in, outside of crab season to see what they can do with “normal”... More

A few highlights from an extraordinary collaboration dinner at @takazawatokyo with Harutaka Takahashi. All delicious and well executed, which isn’t often the case at collabs and popups, in my experience. But these two masters of the their crafts nailed it. NB - first time having chicken nigiri.
