Some highlights from a very special collaboration dinner. Two of Kyoto’s most notable chefs, Yamagishi and Yamaguchi, (of their respectively named restaurants) paired up for a mashup of Kyoto’s top ingredients (and a few imports) combining Japanese and western techniques and flavors. Extravagant and luxurious - kuroge wagyu, snow crabs, fugu, uni, shirako, truffle, and caviar. The crab grilled inside the yuzu was a favorite.

Torishiki. Perhaps the world’s most famous Yakitori restaurant. Amazing quality, of course, but also fascinating to watch chef work and see his technique. Pieces are quite large, and tend towards crispy, which I enjoyed. I didn’t see many of the trends currently happening around Tokyo, rather it seems like a distillation of a casual food into a perfect form, instead trying to make it “fancy”. Highly recommended. Less

I rarely take pictures of Nigiri, but @hiro.sato.sushi ‘s course last night deserved sharing. Just a few highlights here, including one of the vegetable dishes served throughout to break up the meal. One of my very frequent spots - should be on your list.
