- Justin Hurst added a new meal Dinner at はっこく Hakkoku at Hakkoku
I rarely take pictures of Nigiri, but @hiro.sato.sushi ‘s course last night deserved sharing. Just a few highlights here, including one of the vegetable dishes served throughout to break up the meal. One of my very frequent spots - should be on your list.

- Justin Hurst added a new meal Dinner at 焼鳥ひなた at Yakitori Hinata
Yakitori Hinata(@yakitori.hinata). A newcomer to Azabujuban. Chef formerly at one of my favorites, Yakitori Imai. (@yakitoriimai) Excellent technique and quality. Great wine selection, and warm service. Lucky to have another great spot in the neighborhood.

Some highlights from @abysserestaurant, August 2021. @kotaromeguro and team are doing really great work, and the new book is beautiful too. Highly recommended.

- Justin Hurst added a new meal Dinner at YAKITORI燃es at YAKITORI Moe es
A new entrant in the burgeoning “fancy Yakitori tasting menu” genre, @yakitori_moees is off to a strong start. A great mix of excellent grilling, creative dishes, and ramen to finish. All Japanese wine list as well, which is a treat (if you haven’t tried it lately, there’s a lot of great stuff happening).

A very creative and promising new restaurant in Ginza, @ginza_yuzan. The premise is California meets Japan, and as a native of the former and a resident of the latter, it’s a really nice combination for me. So many successful places in CA (and NY, and Paris, and…) have taken Japanese ingredients, styles, and culture into their food. It’s great to see the reverse — the sort of borderless, vegetable heavy flavors you might find in SF or LA, but recontextualized into a Japanese tasting menu format.
Definitely one to watch. Less

- Justin Hurst added a new meal Dinner at Crony at Crony
July dinner at the always excellent @michi_crony. The new(ish) location is really lovely, and the food finds a great balance of flavor, technique, and creativity. For me, one of the more “international” tastes in Tokyo, in a very good way. And of course, The Bread. So good that it comes out on its own, not alongside another dish.

- Justin Hurst added a new meal Dinner at 日本料理 FUJI at Japanese Cuisine FUJI
Just a few highlights from an outstanding meal at @fuji.shizuoka in July. What a great find - a must if you’re in the area. Beautiful, delicate food, all made right in front of you, from the dashi to the sauces. This is only about half of the menu pictured, and it’s a tremendous value as well. - Justin Hurst added a new meal Dinner at おの澤 at Sharikimon Onozawa
A little over a year old, @sharikimon_onozawa is a very impressive new restaurant. From a chef that formerly worked at a Soba restaurant, you get a flavorful and well executed meal with a lot of variety. Instead of rice, finish with your choice of soba. I recommend getting all of them. Recently added to @omakasejapan for easy booking.... More

- Justin Hurst added a new meal Dinner at 食堂みやざき at Shokudo Miyazaki (食堂 みやざき)
Shokudou Miyazaki, Kyoto. An excellent meal that’s hard to classify. Informal, lively atmosphere belies the seriously delicious cooking. Watching the young staff cook, joke, sling highballs, and generally have a good time was a delight. And wow, that karaage lives up to the hype. Go if you can get in.
