A very creative and promising new restaurant in Ginza, @ginza_yuzan. The premise is California meets Japan, and as a native of the former and a resident of the latter, it’s a really nice combination for me. So many successful places in CA (and NY, and Paris, and…) have taken Japanese ingredients, styles, and culture into their food. It’s great to see the reverse — the sort of borderless, vegetable heavy flavors you might find in SF or LA, but recontextualized into a Japanese tasting menu format.

Definitely one to watch. Less
