Restaurant @ukiyo_tky is a perfect example of the diversity defining Tokyo’s dining scene now. Chef @toshmagosh marries global spices with Japanese ingredients, and it works beautifully: suppon beignet with rich suppon dashi, delicate snow crab with kabu turnip and white penja pepper, frankly addictive brioche dusted with fennel powder.

One of the best finds last year. Tucked away in the back of a multi-use building in Yoyogi Uehara, this place is refreshing in its approach and spot on in its execution. My second visit to a really promising new restaurant, built around the concept of various spices incorporated in the dishes.
Some really creative flavors, great service, and a notable wine list.
