Interesting concept - an underground (literally and somewhat figuratively as well) ramen-based course menu. Started with a bit of an education on dashi, with and without soy added. A few tasty dishes followed, then an excellent bowl of ramen. Apparently each time you visit, you get a totally different ramen. Only way to try them all is to keep going... Thank you to @elena.japan for the invitation.
