Masterful. Also, the first time I learned it was okay to order an encore of a course I enjoyed. (Seats next to us had 3). A spot at the counter in front of @teamishikawa is always a special occasion, no matter how many times I go.

A meal utterly without pretension. Nakahigashi-san (father of the chef from Cusavilla, recently posted), emphasizes the best of nature with a style thats rustic yet refined. He’s also very funny and charming. Be sure to have the natural Japanese wine which pairs beautifully.

It had been four years and two months since my previous visit to Sushi Arai. My notes from that meal say “fantastic! This place is going to get crazy busy”.
Sadly, I was far too accurate. Now quite hard to book, and deservedly so. Arai-san is doing great work, so much so that he moved upstairs to a larger space shortly after this meal.

A spot I really enjoy, Erba de Nakahigashi, has rebranded as @cusavilla. Focusing almost entirely on vegetables, Chef draws out a depth of flavor from every part, while really highlighting the season. Style is Italian through a very Japanese lens. Good wine list as well.

Tiny, with only four tables, it’s a beautiful space. The course menu is an excellent value, as are the wines. Some highlights from a very promising new kaiseki restaurant called Ensui (炎水), in Nakameguro. I loved the space and the showmanship; things like shaving katsuobushi or grinding sesame by hand in front of you. Looking forward to watching them evolve.

The Champagne is in magnum, the ham is from Spain, the cheese boards are massive, the pancake is insane, the whiskies are rare, the cocktails are sharp, and the food is much better than it has any need to be.
