At @esttokyo, located inside @fsotemachi, the Earth Day Lunch held yesterday was not just a meal - it was a tribute to our planet🌲 The @michelinguide-starred restaurant presented a one-day-only set menu crafted almost entirely from Japanese-grown ingredients🇯🇵 Chef guillaumebracavalchef and his team showcased seasonal vegetables in elegant, contemporary French dishes - each rooted in sustainability❤️

From the vibrant Hokkaido asparagus salad to the delicate tofu cheese made from Kyoto soy milk, every plate reflected the restaurant’s deep respect for nature and commitment to low-impact fine dining💐 The dessert, aptly named “Papillon,” symbolised the fragility and beauty of our ecosystem, as Pastry Chef @micheleabbat transformed local rhubarb and often-discarded fruit peel into an artful finale inspired by @damienhirst♻️

昨日は「地球のことを考え、行動する」環境保護の記念日「アースデー」🌍 「フォーシーズンズホテル東京大手町」内のミシュラン1つ星のコンテンポラリーフレンチ「est」では国産の食材をメインに使用したサステナブルなスペシャルメニューのイベントが開催されました✨ 北海道産アスパラガスのサラダや、京都の豆乳から作る自家製の豆腐チーズなど、季節の恵みを活かしたベジタリアンのラインナップを堪能しました🧀

デザート「パピヨン」は、地球の繊細さと美しさを象徴する蝶々をイメージした逸品🌷 イギリスを代表する現代アーティスト「ダミアン・ハースト」にインスピレーションを受けたそうです🎨 国産ルバーブと桑の実を使い、普段は捨てられがちなルバーブの皮まで丁寧に煮込んで活用❤️‍🔥 オーガニックハチミツで甘みを加えたこのスイーツは、味覚だけでなく、自然との共生を考えるメッセージも詰まっていました📮
