Toyama’s Sushi Jin. Excellent local ingredients, a fresh style, very personable and happy to talk about how and why he does things his way. Notable for serving only local nihonshu from Masuizumi, as well as Krug. Strongly recommended, and if you can’t make it out there, he does very frequent pop ups around Tokyo.

Amazing tuna bowl lunch at a charming little counter in Kanazawa, at Ageha. Worth the wait in line. Run by sweet, funny people. Serving killer seafood at amazing prices. Would be fun to bring friends and do a buyout for a sake fueled dinner.

Ramen Yamaguchi. An all time favorite. Chicken and shoyu based, with chicken and yuzu wontons. Also tried the mini rice bowl with pork, which was excellent. Worth the line up, which was about 35 minutes at 2pm on a Saturday.

July dinner at the always excellent @michi_crony. The new(ish) location is really lovely, and the food finds a great balance of flavor, technique, and creativity. For me, one of the more “international” tastes in Tokyo, in a very good way. And of course, The Bread. So good that it comes out on its own, not alongside another dish.

Sushidokoro Mekumi, outside of Kanazawa. A singular experience by a truly dedicated chef. Famous for his painstaking procurement of seafood around the region, and a unique style. No nigiri pictures allowed. Sake paring is a must, as well. Extremely fortunate to have gone twice in crab season.

From the minute you walk in to @makinonci, you realize it’s something special. Perched on a hill overlooking Kanazawa, they beautifully highlight the local ingredients. I won’t spoil the fun by saying too much about the dishes; I definitely recommend you go when you’re in that (lovely) part of the country.

A few highlights:
When it was time for pasta, he wheeled up a table and rolled out the dough, then filled it and folded them. Filled pasta made to order, served only with Vacche Rosse Parmigiano-Reggiano.
After the meat, I thought the course was nearly done. Then came parade of charcuterie, served variously on hands (for warmth), on rice, and on bread.
A table it took me years to book, and which might take just as long to get back to. But oh, is it worth it. Less

Absolutely excellent sushi at Kobikicho Tomoki. The quality of the neta was just surreal. Extremely friendly atmosphere, a varied course with lots of otsumami, even grilled dishes. Highly recommended.
