- Justin Hurst added a new meal Dinner at MASIA at MASIA
Masia, Tokyo
Very impressive first visit to @masia_tokyo Masia in Ginza, a new, modern Spanish restaurant.
Chef @mateuvillaret is from Catalonia, and has family roots in other parts of the country as well. This shows up in the cooking, where he’s mixing influences from around Spain into a single dish.

The Catalan idea of “Mar I Muntanya”, or “sea and mountains” is really well executed here. Working with both Spanish and Japanese products, chef is delivering tastes that are less common in Tokyo. The “gallo rustido”, here using Bomba rice, shamo chicken, and Sakura shrimp was a particular favorite.
An short but well considered all-Spanish wine list and thoughtful pairings rounded out the meal nicely.
Tokyo - don’t sleep on this one. The guests next to me had come in for lunch the day before, and enjoyed it so much they returned for an entirely different dinner menu. When you do go, make sure to ask chef for some of the smoked olive oil - it’s remarkably good. Less

- Justin Hurst added a new meal Dinner at Droit at Droit (Droit)
Droit, Kyoto
This is the kind of cooking I always enjoy. Very high quality, seasonal ingredients. Excellent technique and sharp skill, but not in your face about it, just enough to bring out the taste.
A meal where every dish in the course carried its own weight, no fillers here. A few examples:
Beef tongue, foie gras, truffle “Mille-feuille”,... More

Beef tongue, foie gras, truffle “Mille-feuille”, with Pain d’épices.
Roasted citrus and cauliflower soup.
Some excellent veal, a relative rarity in Japan.
Soft cheese coated in green tea, rather than herbs.
Always a pleasure being back… Less

Kutan
Tokyo
An early March menu featuring fugu in many forms, including sashimi, grilled shirako (huge!), and karaage.
Always a great meal from @k.rox_kutan.

Kobe
Great ingredients, cooked simply over wood fire, with no unnecessary adornment. Not a single thing could have been removed, nor would adding anything more have enhanced the dishes further.
For me, the confidence required to send out a dish like this, much less an entire menu, is a sign of greatness.

And here’s something I rarely recommend — get the pairing. Wines are tasty, well matched, with a few nice surprises. Less

- Justin Hurst added a new meal Dinner at Restaurant A.T at AT
Some scenes from a very smart and extremely delicious dinner at @restaurant_at. So good to be back after five years.
Every plate was beautiful executed, with superb cooking and deep flavor. Wines are all natural, and I discovered some new treasures.
For me, an essential Paris table.

A remarkable meal at @cafedesministeres.paris. Food like this is why I came to Paris.
Amazing product, strong but unobtrusive technique, stunning depths of flavor. And yes, the stuffed cabbage dish is as good as everyone says. The scallops were similarly dreamlike.

Always a pleasure to have dinner by @jeromequilbeuf. His modern Spanish restaurant @tinc_gana_tokyo is a great mix of flavor and technique, in a friendly and comfortable format. A great sibling to the more casual @gracia_tokyo.

Seasonal dishes mix with stalwarts to make a menu that’s always offering something new. The firefly squid were a particular standout on this visit. The paella onigiri is a great way to finish the meal, and the famous cheesecake is worth the hype.
Special thanks for having @champagnelelargepugeot on the list - such a great match with the food. Less
