Fukinoto was dug up from under 2m of snow, other root vegetables were stored in snow for months. Bear and duck were rich and intense. The fukinoto cake at the end was surprisingly delicious and balanced.... More
Dewaya 出羽屋 1st visit — 1 of the best meals so far this year. Impressive how the chef could pull off a mountain veggie meal in deep winter. Fukinoto was dug up from under 2m of snow, other root vegetables were stored in snow for months. Bear and duck were rich and intense. The fukinoto cake at the end was surprisingly delicious and balanced. Definitely worth the 3 hours Shinkansen + 1 hour taxi trip. •

Kawaki 川㐂 1st visit — 3rd crab meal in 4 days at one of the top crab restaurants in Japan. The meal started with a few appetizers including a delicious crab soup steamed hireguro (black fin flounder). Then it’s all about the crab — intense kani miso, delicate and juicy meat. The owner showed us the proper way to deshell, a lot of work but satisfying. Crabs served here are slightly smaller than those served at Bouyourou but still very high quality; and I loved that the meal was purely just focusing on the crab. Definitely a must for crab lovers. •
