#tb to a fantastic dinner at @sushi.shunji, where husband-and-wife team Shunji and @ayapan0528 Hashiba create an elegant yet welcoming atmosphere. Highlights included magnificent uni from Ehihime, abalone in a sauce enriched with its liver, sawara nigiri and umami-dense hamaguri clam. Each morsel was enhanced by Ayako-san’s thoughtful wine and sake pairings.

my first encounter with the saito line, with his protege opening his own shop within recent years. foreigner friendly and seemingly encouraged to indulge in their great wine selections, served at the hands of husband and wife duo.
began with a series of creative and complex tsumamis like tuna meatball and daikon in dashi, kuromutsu sushi in sansho infused rice and a steamed saba with shiro miso sauce; also got a tasting of their own brand of caviar before the nigiri section began.

中トロ

季節外れと言っていいくらいに素晴らしい下田産鮪が入ったとのことで、この日は鮪を4貫頂いた。

赤身、血合いぎし、大トロと頂いた後に、中トロ。全く雑味を感じさせず、鮪の澄み切った味わいが素晴らしい。脂の乗った大トロよりもバランスが良く、順番に説得力がある。

この中トロは塩で食べさせるなど、師匠の齋藤さんに少しでも近づこうとする努力だけでなく、ここ3年、独自の創意工夫に基づく進化が著しい。

大間産鮪の赤身と背トロ、銚子産鮪の大トロ

赤身は切り付けの厚さが絶妙で、ねっとりと柔らかい。背トロは塩で頂く。大トロのみ銚子産。風味は濃厚だが、鮪にありがちな癖は全くない。

単に師匠から学んだことを実践するだけでなく、個体ごとの持ち味を見極めたり、それに合わせた生かし方を工夫したり、自分なりの考えを反映しているのが素晴らしい。
