世界に日本の食材や匠を伝えいたいとカウンタースタイルで提供されるおまかせコース。目前で調理や盛りつけをする臨場感に加え、ベテランならではのツボを捉えた皿の構成と安定感のある美味しさが光る。最近ではキャビア ウニ パルミジャーノ、天然鮎のフリット、フォアグラトリロジー、フランス産仔羊のローストなどが堪能できる。ワインとのペアリングも人気とのこと。

The Omakase course is served counter-style with the aim of introducing Japanese ingredients and craftsmanship to the world. In addition to the immersive feeling of cooking and serving food in front of customers, the composition of the plates captures the key points unique to a veteran chef's skills. Recent menu highlights include caviar sea urchin parmigiano, sweetfish fritters, foie gras trilogy, and roasted French lamb. Wine pairings are also popular.

「もっと出来立て感や日本の食材や匠を世界に伝えたい」と1日8席限定でカウンタースタイルで料理を提供する。こだわりの食材を使っているおまかせコースではサクラマス ホワイトアスパラムース、天草藍鰻の炭火焼きなどが楽しめる。フレンチだけにこだわらないシェフの趣味全開のメニューで素材の味の引き出し方がとても素晴らしく圧倒されるとお客さんからも人気。ワインも充実しており、ペアリングが楽しめる。

The restaurant is limited to 8 seats a day and serves food in a counter style. "I want to convey to the world a more freshly prepared feel, Japanese ingredients and craftsmanship," Chef Kishimoto says. The Omakase course includes cherry salmon white asparagus ramose sauce and charcoal-grilled Amakusa eel. The menu is popular with customers appreciating the chef's taste and the way he brings out the flavors of the ingredients in an innovative French menu. There is also a good selection of wines to enjoy.

This place continues to create its own identity with a focus on each ingredient of each dish. Nothing is compromised and both presentation and output are on point, highlight key components and flavours in a subtle manner. Service is always a notch above, and I always seem to leave the place a bit intoxicated. That's always a good sign.

At L'Embellir, Kishimoto-san was already showcasing pretty good dishes, but with Naoto.k, i feel that he is finally able to be 100% himself and cook straight forward dishes that are neither too complicated, nor convoluted. Yes he focuses on premium ingredients and yes, they taste damn good. Definitely a level up! So good. 👌👌

Naoto.K 1st visit — a new venture by the ex-l’Embellir team, a more interactive experience and more ingredient focused. Nice new space and great hospitality. A good balance between classic technique and innovative expressions. I first thought the DRC Fine de Bourgogne spay onto the steak was a little gimmicky but it did elevate the aroma to a new level. •
