Excellent French restaurant on the tip of the Noto Peninsula. The Chef trained in Paris at Robochon and it shows. Solid technique, interesting combination of ingredients result in very tasty flavor profiles. His saba (mackerel) taco which you roll up yourself tastes fantastic. High acidity in the fish is paired with vegetables with different textures and dusted with olive powder.
The buri was seasoned for one week, for me too long, as it created an unnecessary softness.

L’atelier de Noto ラトリエ・ドゥ・ノト 1st visit — taking food trips to the next level: 2 hours delay + 1 hour flight to Wajima, the northern coastal town of Noto peninsula. I’ve always wanted to visit this relatively remote restaurant and finally made it. Most dishes worked well combining western techniques and local ingredients.
