Epic DRC dinner, WOTN: 71 Echezeaux & 89 GE. The 71 was fresh and vibrant, showed a lot younger than the 72 GE in the same flight. Rich and sweet red fruit, elegant spices with sous bois nuances and underlying mineral tension. This perfect drinking stage could last for another 5-10 years. 89 GE is a lot more intense, robust and dark fruit dominant. Just moved past its primary stage, showing some earthy savory characters. Highlights from a great first visit to @restaurant_ryuzu. Technique, flavor, and service were all really good. A nice wine list too, including one of my favorites, Jamet, which I rarely see in Japan.
