「シェフズテーブル」とは、シェフが料理をつくっているところを観ながら食事をしたり、シェフの説明を受けながら特別メニューを楽しむ事で、そのシェフズテーブルを「開化亭」では、月1回行っていたが、今では東京・銀座でも行い、オープンキッチンにてお客様に数々の感動的な料理をオーナシェフである古田等氏自らが提供中。豪華な食材をシンプルに調理し、素材の味を生かした料理の数々が味わえれ。最近では干しアワビ、天然トラフグ、フカヒレ、フグの白子、松葉蟹の春巻きなどが楽しめる。「フルタ」のシグネチャー料理であるキャビアの冷製ビーフンは欠かせない一品。

"Chef's Table" is a special menu for diners to enjoy a meal while watching the chef prepare the dishes or explain the menu. The owner-chef, Hitoshi Furuta, provides many impressive dishes to customers. The restaurant offers a variety of dishes, using simple cooking techniques to enhance the ingredients' flavors. Recent highlights include dried abalone, wild Tora Fugu, shark fin, Fugu milt, and Matsuba crab spring rolls. The signature dish, cold rice noodles with caviar, is a must-try.

Furuta 1st visit — one of the most highly rated and expensive Chinese restaurant in Tokyo, I had high expectation but the experience was underwhelming to say the least. For a 70k jpy menu, the fukahire served was not even a whole piece, which was very disappointing. All the dishes tasted good but hardly better than many other places charging half the price. Oh well.. just had to try at least once. •
