「真心(丹)のこもった料理が永遠(久)に愛されますように」という思いが詰まった「久丹」。日本だけではなく、海外でも修行を積んだ中島 功太郎氏が「食欲をそそる料理を出していきたい」と腕を振るう東京和食のドラマチックなおまかせコースが味わえる。一品一品、季節の素材を生かした天然舞茸天、鯛の白子ポン酢、鯛の造り、松茸とズワイ蟹しんじょう椀や、鯛だしの煮麺などが味わえる。料理と日本酒やワインのペアリングもオススメとの事。

“Kutan" was conceptualized with a desire that "dishes made with sincerity will be loved forever”. Kotaro Nakajima, who has trained overseas and in Japan, offers an extravagant Omakase course of Japanese cuisine that hopefully whets your appetite. Each dish features seasonal ingredients such as natural Maitake mushroom tempura, sea bream milt Ponzu, sea bream sashimi, Matsutake mushroom and snow crab fish ball, and noodles simmered in bream broth. Sake and wine pairings are also recommended.

Consistently great meals here, this one from a few months back. Shirako and crab were on top form and the atmosphere was better than I remembered it. The thinly sliced awabi cuts in the soup were nicely balanced with the mellow dashi. Fine execution and one of the best meals I have had here.

A few highlights from a brilliant and subtle dinner at Kutan (久丹). This newcomer, just nine months old but with a great pedigree, is going to be impossible to book soon. Smart food, delightful staff, great wine and saké choices. @k.rox_kutan and his team are doing fantastic work. I can’t wait to visit again and see how they evolve.
