Finally made it to Jade Dragon — 3 Michelin stars, one of the highest rated Chinese restaurants in Macau. Perfection from beginning to the end, especially the octopus meat patty which was juicy, tasty and crunchy, best I’ve ever had!•

First time having a set menu at Jade Dragon rather than Dim Sum or ALC , and it was my favourite meal here so far .

Nuanced flavours that felt a little European at times and were somehow subtle but robust .

A trio of apps start the meal , suckling pig with caviar is probably a little over done these days but it’s a winning combo , but the deep fried Cristal blue prawn absolutely popped and the toasted sea cucumber and jelly fish with balsamic was a nice palate reset .

I visited Jade Dragon in 2018 when Executive Chef Kelvin Au Yeung had just taken over from his predecessor. While the meal was good, I found the east/west approach to presentation and plating slightly disconcerting.

But when I returned for lunch recently, I was blown away by the deft confidence of Chef Kelvin’s Cantonese cooking. What a difference five years makes! He seems to have mastered the art of “less is more”, and zeroed in on quality of ingredient and subtlety of technique.... More

Kelvin Au Yeung took over when Tam Kwok Fung left for the Wynn Palace. Some people say that JD has been better since then and I can understand why they say this.
The signature dishes like the best suckling pig are still there, expertly executed. Slowly other dishes created by the new team get introduced. The Fish Maw In Rabbitfish Soup is one of them, a great dish, very well calibrated and refined. I am very happy.

Part of the multi-day marathon arranged by the marvellous Peter Chang.
Jade Dragon in Macau beat the multi stage & day competition of “who is cooking the best suckling pig”. But not just, by a mile!
The consistency, taste, texture and flavour cannot be bettered. It almost disappears in your mouth leaving only a very happy face.
Overall an exquisite meal which in my view beats hands-down most of the 3 star places in HK.
Rumour has it that the Chef will move, this would be very bad news... More

An absolutely delicious lunch with a menu set by Chef Tam. Very refined dim sum items, the wonderful iberico collar char siu (barbecued pork), and the best stuffed suckling pig.
