Sushi Koma 鮨駒 (Akita) pop up in Tokyo — by no means a traditional sushi meal, techniques such as smoked caviar and amadai sushi topped with crispy scales are probably something you would expect in a high end American sushi restaurant but they worked so well with the top quality ingredients and acidic akazu shari.
