Mikadoya 美加登屋 1st visit — ayu specialist located in the remote Nishihara town of Shimane prefecture. Not easy to get to but the exceptional ayu ryori here is definitely worth the trip. Most memorable dishes were the extremely fresh ayu sashimi and the 1-year fermented ayu guts, which was the funkiest dish I’ve ever had! •
