After an amazing dinner last night in Ghent at Chambre Séparée, this morning I drove about an hour West to the coast to visit Restaurant Willem Hiele Fine Dining in the town of Koksijde.
I am amazed this place does not have more recognition from the Michelin guide. It really was a spectacular meal. Willem cooks using herbs and vegetables from his own garden, locally sourced meat and seafood only from the North Sea which is only a few hundred yards away. The food is inventive and delicious.
Even though Willem and his wife have been running this restaurant for 6 years now, he still spends his spare time flying off to do stages in other restaurants in order to gain even more experience. Recently he has done stages under Mikael Jonsson at Hedone in London and Bittor Arguinzoniz at Etxebarri in the Basque Country.
This goes some way to explaining why I enjoyed Willem’s cooking so much as he chose to stage under two of my favourite chefs on the planet.
Anyway, as you may be able to deduce, I liked this meal a lot and I highly recommend you visit if you are in the area, or like me, even if you are not in the area.

After being very glad that this restaurant got its second star this year (I have visited a few times over the years) I was slightly disappointed with this meal. But the previous meal last year blew me away, it was a fantastic.

An incredible host here in this wine shop and restaurant and bar. Great home cooked pasta. They also have rooms upstairs in the ancient wine caves.

I stumbled across this winery and local Osteria on my way back from Alba. Very nice Italian comfort food. Sliced meats to order. Packed with locals and no tourists. Worth a casual lunch or dinner if you are in the area. Better with a group as the portions are huge.-

Dinner last Thursday at ⭐️⭐️ Mirazur in Menton. Having visited Mauro Colagreco’s restaurant 6 times now over the years, its been a bit of a rollercoaster. Generally it’s good. You don’t reach #4 on the 50 Best Restaurant list by having a bad restaurant (although mediocre restaurants have been known to approach those heady heights

Lunch earlier this week at the London outpost of Michelin starred Indian Accent. For refined and progressive Indian cuisine in London, this is at the top of the pile.
“Chef Manish Mehrotra reinterprets traditional Indian dishes with an openness towards global techniques and influences.”
With the 6 course lunch at £45 it is also great value.
