Delightful dinner at @saintpeterpaddo. Described as “fantastic seafood, local produce, a spot of technique”. Seems pretty accurate to me. Tiny room, lovely staff. Recommended.

Toyama’s Sushi Jin. Excellent local ingredients, a fresh style, very personable and happy to talk about how and why he does things his way. Notable for serving only local nihonshu from Masuizumi, as well as Krug. Strongly recommended, and if you can’t make it out there, he does very frequent pop ups around Tokyo.

I know I’ve said it before, but @ester_au is one of my all-time favorite places. Mastery of flavor, great atmosphere, and a killer curated wine list. The $88 AUD ($63 US) tasting menu is a screaming deal. Must dine. Oh yeah, and that Veyder-Malberg didn’t suck.

Amazing tuna bowl lunch at a charming little counter in Kanazawa, at Ageha. Worth the wait in line. Run by sweet, funny people. Serving killer seafood at amazing prices. Would be fun to bring friends and do a buyout for a sake fueled dinner.
