This piece was prepared in a special way by the master @hide.namba first the skin was removed then friend and put on top with sea salt! The texture and taste were just wonderful. Namba truly one of a kind and one of the best in Tokyo

Sushi Namba Hibiya is one of the only 6 Tabelog Gold sushiyas located in Tokyo. Chef Namba is known for being extremely meticulous in temperature management of shari and neta. I have been to Sushi Namba a few times - Namba San’s uni and maguro selection was consistently outstanding. Thanks to Namba San’s generosity, we were offered an off-menu toro temaki and a gigantic Murasaki Uni from Kyushu. The latter was one of the best Murasaki Uni I have had this year – its lasting yet delicate kombu flavor was to die for. Namba San also curated some unconventional, seasonal tsumamis like mixing matsutake with sanma. Flavors were indeed very bold and polarized.
Namba San is currently expanding his business by setting up a branch in Yotsuya and a members-only sushi restaurant in Miami. I genuinely hope he can scale up his business smoothly as it is always challenging to do so for a sushiya.

Side counter. Namba-san does it in an intersting way. He staggers the starting time, so he can fist finish the nigiri for the counter and then does himself everything on he side counter. A very nice experience as it is more intimate and allows for a better communication with the Master.
Sushi Nanba, Hibiya, Tokyo. Known for his precise control and combination of temperature of shari and neta, as well as excellent otsumami. Delicious saké as well, nice variety. A place I’d love to go more often, if I could manage to get in.

His ankimo is outstanding, he cuts away huge junks to leave just the inner core. Sweet and flavorful it melts in your mouth and just leaves a marvelous lingering taste behind.
The nigiris are also well executed and sourced. The sea bream being today’s favorite of mine.
