The wok-show is indeed largely a show, but for Chinese cooking, the most important tool for a chef... the sound of the afterburners as the BTUs are pumping through always evokes salivation and excitement as to what is to come.. solid meal as always.

Ever since he was at Ranmaru, the taisho's charisma and the execution of his nigiri was top notch. So, when he went independent, naturally the bookings blew up, so it took me quite a while to finally make it here. It was a nice surprise to see the progression in the nigiri style and flavour in a positive way.. more balanced on the vinegar, better size cuts of neta and just an overall a more refined experience. There is more focus on a variety of fish instead of just tuna, and whilst taisho's demure is still that of casual banter, there is definitely a new level of seriousness in him!

Nestled in the outskirts of Gifu City in a 150 year old house, this is the more casual shop within the Tanaka group of beef restaurants. Good use of various parts of the cow, their omu rice and chateaubriand Cutlet were the highlights. Rich sauce to complement the well cooked beef dishes, and a few seafood courses thrown in for good measure. Quite a decent hike to get there but if you're heading up north from Nagoya, it's a pretty convenient stop.

A nice little restaurant in a more happening part of Hiroshima, surrounded by clubs and bars and the odd pachinko or two. Once you enter the cozy 5th floor interior though, the vibe is completely different, with a buzz happening in the open prep-kitchen that all the counter seats face. Today's menu was largely fish and seafood based, with innovative flavours through a large array of sauces that the chef clearly loves. I might have preferred a few less fish dishes, but overall a good meal with good wine service and friendly staff. Best part was the ambiance though... part wine bar feel, part bistro feel, but just really comfortable.
