A place that diehard washoku lovers rave about a lot. Rightly so in that within the Kyoaji lineage, I would say this shop pushes the modernity in flavour a bit more than some of his counterparts, so i would put this pretty high on my list from this lineage. Presentation is straight up, focused on ingredients and flavour. Sometimes when Hoshino-san feels it is appropriate, dishes are just simply tempura'd.. following a trend that I notice more... More

Presentation is straight up, focused on ingredients and flavour. Sometimes when Hoshino-san feels it is appropriate, dishes are just simply tempura'd.. following a trend that I notice more and more at some top washoku places. I am a big fan of tempura but I do feel that more than 1 tempura dish in a washoku course is a little out of place. Nonetheless, tasty dishes and good service. Taisho takes a bit of time to warm up, but he does so throughout the course of the meal.

Final rice course was plain cooked rice with chirimen (dried Japanese small anchovies) しぐれ煮 sweet cooked beef which I always joked as the Japanese version of 燈影牛肉, akamiso soup with sansho. For refill I got a raw egg yolk which to me was the ultimate condiment for Japanese rice. Dessert was warabi mochi with kuromame kinako (toasted black soy bean powder).

As mentioned many times, I believe the type of food made by a chef reflects the chef’s character and personality. The pure and minimalistic cuisine at Shinbashi Hoshino reflects Hoshino san’s very genuine and beautiful mind. It is refreshing to eat his food in Tokyo which is crowded with flashy and lux offerings. It is littlemeg_alltimefavorite kaiseki in Tokyo for the last 3 years.
